Ellen Zimmermann established the Austin School of Herbal Studies in 1995. Situated within her botanical sanctuary—her home and gardens on a five-acre property in the Texas Hill Country just south of Austin—the school offers diverse courses focused on culinary, medicinal, skincare, and gardening applications of herbalism.
